By eating nutritious superfood you can eat your way to beautiful skin. That‘s why I eat this simple and healthy breakfast bowl every morning and I‘m going to share the recipe with you. It only takes 5 minutes to make!

Why Does This Superfood Make Your Skin Glow?

This recipe is a miracle for your skin as it contains plenty of nutrients that aid skin health. Nuts and seeds provide you with healthy fats, which provide energy and help you absorb nutrients. Apples and berries are delicious and high in vitamins so you can eat this breakfast knowing it‘s good for you.

Blueberries in Your Breakfast Bowl

The main ingredient is blueberries, which are one of the highest food sources of antioxidants. They‘re high in vitamin C which makes them incredibly beneficial for your skin. Furthermore, they‘re anti-inflammatory which is important when dealing with acne or rosacea. I pick my own blueberries when they‘re in season and freeze them but of course you can use storebought blueberries – as long as they‘re organic. The reason why I prefer organic blueberries (and overall organic foods) is that non-organic ones can contain harmful preservatives. This is a photo of some wild Icelandic blueberries (I ate them afterwards and they were delicious!).

An apple a day truly keeps the doctor away! Apples contain important nutrients for the skin. They have a high content of Vitamin C and also contain small amounts of Vitamin A which is beneficial for the skin. Furthermore, they’re hydrating because of their high water content.

Chinese Dates (Jujube) Reduce Inflammation

Jujube fruit, or Chinese date, is a small round fruit that is sweet and chewy. It’s very rich in vitamin C and antioxidants, which makes it great for your skin. Jujuba juice has been used topically to treat irritation and inflammation, but can be consumed for the same effect. That’s why it’s the perfect ingredient for my superfood breakfast bowl.

Seeds and Nuts are Superfood

  • Nuts and seeds are a great way to incorporate healthy fats into your diet. Pumpkin seeds are rich in omega-3 and omega-6 fatty acids and also contain a lot of zinc which has anti-inflammatory properties. For this reason, pumpkin seeds can help with redness and scars from acne.
  • Sunflower seeds are rich in Vitamin E which is anti-inflammatory and is vital to produce collagen. Because of this, sunflower seeds can help you maintain a youthful glow.
  • Hemp seeds are a great source of omega-3 fatty acids and are rich in Vitamin E and magnesium.
  • Walnuts are rich in healthy fats and high in antioxidants which can help slow the aging of your skin. Eating them regularly may also improve brain health and reduce your risk of heart disease and cancer.

My breakfast bowl is a great way to incorporate all of these benefits into one. Here‘s the recipe!

Superfood Breakfast Bowl

1 organic apple (organic because I use the peel too)

1-2 dl organic blueberries

6 Chinese dates (Jujube) stoneless

1 tbsp toasted pumpkin seeds

1 tbsp toasted sunflower seeds

2 tbsp toasted hemp seeds

A handful of walnuts

I like to soak the Chinese dates overnight so I put them in a bowl in the evening and add 1.5 dl water. The next morning dice the dates and the apple and add them to a saucepan with the water they were soaked in. If you forget to soak them overnight you can still use them, just add them to the saucepan with the apple and the water. Simmer without the lid at medium heat for 5 minutes or until soft. Add blueberries into the pan, simmer for a few seconds if they‘re frozen, and then pour the mixture into a bowl. Sprinkle the seeds and walnuts on top and enjoy!
